Honey Garlic Shrimp

Quick, simple and big on flavour. Good over brown rice with steamed vegetables, or on a salad.
ingredients
- ⅓ cup honey
- ¼ cup soy sauce, reduced sodium
- 2 garlic cloves, minced
- 1 tsp minced fresh ginger, optional
- 1 lb medium uncooked shrimp, peeled and deveined
- 2 tsp olive oil
- Chopped green onion, to garnish
method
- 1Whisk the honey, soy sauce, garlic and ginger together in a medium bowl. Use half as the marinade in step 2 and reserve half for cooking in step 4.
- 2Place the shrimp in a sealable container or zip-top bag. Pour half the mixture over, stir, and marinate in the refrigerator 15 minutes — or up to 8–12 hours.
- 3Refrigerate the reserved half separately.
- 4Heat the olive oil in a skillet over medium-high heat. Add the shrimp and discard the used marinade. Cook on one side until pink, about 45 seconds, then flip. Pour in the reserved marinade and cook until the shrimp is cooked through, 1–2 minutes more.
- 5Serve with the cooked sauce and a garnish of green onion.
